Ingredients

Servings

For the sofrito

  • 1 small white onion , chopped
  • 3 cloves garlic , chopped
  • ½ green bell pepper , diced
  • ½ red bell pepper , diced
  • ½ yellow bell pepper , diced
  • 1 small bunch cilantro , chopped
  • 2 tablespoons olive oil

For the stew

  • cups pinto beans
  • ½ cup vegetable oil
  • 6 tablespoons sofrito
  • ½ lb cooked pork ham , diced
  • ½ lb pork sausages , sliced
  • 2 carrots , diced
  • 1 red bell pepper , diced
  • 2 cloves garlic , crushed
  • 2 tablespoons chopped cilantro
  • 1 teaspoon oregano
  • 3 tablespoons tomato paste
  • 1 tablespoon annatto oil
  • salt
  • water

Instructions

Sofrito

  1. Mix all the ingredients in the bowl of a blender.
  2. Mix well until obtaining a thick consistency (not too liquid).

Stew

  1. Wash the beans thoroughly under cold water. Drain them.
  2. Soak the beans in a large bowl, covered with water, for 12 hours.
  3. After 12 hours of soaking, drain the beans in a large saucepan, and cover with 3 times their volume of water.
  4. Bring to a boil over high heat then reduce the heat to simmering.
  5. Cook for 45 minutes. In case it takes longer, add boiling water during cooking if necessary. Stir occasionally.
  6. Pinto beans are ready when you can easily crush them with a fork. Drain.
  7. In a large pot, heat the oil over medium heat. Add the sofrito, garlic, ham, sausages and peppers and fry for 10 minutes, stirring regularly.
  8. Add the carrots and mix with all the ingredients.
  9. Add the beans and the remaining ingredients.
  10. Season with salt and pepper.
  11. Cover with water and bring to a boil. Cook for 5 minutes uncovered and over high heat, stirring gently and regularly.
  12. Reduce the heat and cook covered over medium heat for 20 minutes, stirring gently.
  13. Serve with white rice.
