Halibut Ceviche
Description
Fresh halibut is cut into bite-sized cubes and salted before being submerged in lime juice, which denatures the fish proteins and gives the texture of cooked fish after about four hours in the refrigerator. Once the fish turns opaque white, the lime juice is drained off to prevent over-acidification.
The ceviche is combined with diced ripe tomatoes, creamy avocado, finely chopped red onion for bite, and jalapeño for mild heat. Fresh cilantro adds an herbaceous finish. A final adjustment of salt ensures balanced seasoning.
This dish can be served on its own or accompanied by toasted bread to complement the freshness and acidity. It offers a vibrant, tangy seafood option that does not require traditional cooking methods.
Ingredients
- 1 pound halibut cubed, sushi-grade
- 1.5 cups lime juice fresh
- 1/2 tsp salt to taste, sea salt
- 1 large avocado peeled and diced
- 2 tomato seeded and diced, vine-ripened
- 1/3 cup red onion finely chopped
- 1 jalapeño seeded and finely chopped
- 1/2 cup cilantro chopped, fresh
Instructions
- Chop the halibut into bite sized pieces and place in a glass or stainless steel mixing bowl. Sprinkle with sea salt and pour in the lime juice (add more lime juice if the fish isn’t completely submerged). Stir well, cover with plastic wrap and refrigerate for 4 hours, stirring occasionally, or until fish is completely white and “cooked” through.
- Strain the halibut, discarding the lime juice. Place the halibut in a serving bowl.
- Add the tomato, avocado, red onion, jalapeno and cilantro to the mixing bowl and gently toss to combine. Add sea salt to taste. Serve as is, or with toasted bread.
