  • 2 tablespoons butter unsalted
  • 1 yellow onion , diced
  • 2 carrot diced
  • 2 celery diced, stalks
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 3 cloves garlic , minced
  • 3 cups ham , diced
  • 45 ounces cannellini beans drained and rinsed, white
  • 1 prig thyme fresh
  • 1/2 teaspoon rosemary dried
  • 2 bay leaf
  • 4 cups chicken broth

Instructions

  1. Add the butter to a large Dutch oven over medium heat with your onion, carrots, celery, salt and pepper.
  2. Cook for 6-8 minutes, stirring occasionally, until onions are translucent.
  3. Add in the garlic and stir well, cooking for 1 minute.
  4. Add in the ham, cannelini beans, thyme, rosemary, bay leaves and chicken broth and stir well.
  5. On medium-high heat, bring to a boil, then reduce heat to medium-low and simmer for 30 minutes.
