Ham and Cheese Pasta Bake from the South Tyrol
Description
The recipe begins by making fresh pasta sheets and cutting them into small approximately 1.2-inch squares. These are boiled in salted water until al dente, then mixed in melted butter and some cubed cheese to prevent sticking and add richness. Separately, ham and cheese are diced into bite-sized pieces.
A buttered baking dish is layered starting with the cooked pasta squares, then sprinkled with cubed ham and cheese, repeating layers to cover the dish. Baking at 180°C (356°F) for about 15 minutes melts the cheese, allowing the ingredients to meld and the top to develop a mild golden color. Resting after baking helps set the texture.
The pasta bake features the delicate texture of fresh pasta squares combined with flavorful cheeses that melt smoothly and tender cooked ham. It works well as a main dish or hearty side and conveniently uses leftovers. Ready-made lasagne sheets can be substituted by cutting and pre-cooking them slightly. Ingredients
To make the pasta dough
- 7 oz Italian 00 soft wheat flour or all purpose flour, 200g
- 2 egg large
- 1 pinch salt
To finish the dish
- 7 oz Asiago cheese or gruyere, fontina etc cut into cubes, 200g
- 5 oz cooked ham cut into cubes. Leftover holiday ham works really well in this recipe, 150g
- 2.5 oz butter 75g
- salt to taste
Instructions
To make the pasta squares

- Cut each sheet of pasta into 3x3cm (1.2in) squares. Place ready squares on a floured surface until all are ready. The squares don't need to be perfect just more or less the same size.
Finish, bake and serve.
- Cut the ham and cheese into small cubes. Melt the butter in a small saucepan.
- Cook the pasta squares in boiling salted water for 1-2 minutes until al dente. Drain and put in a bowl with melted butter and some cheese cubes. Add salt and mix carefully.
- Butter an oven dish and then make a layer of pasta squares in it. Cover this with pieces of ham and cheese and then make another layer and cover this in ham and cheese too.
- Bake your ham and cheese pasta squares in a preheated oven at 180°c (356°f) for about 15 minutes or until the cheese has melted and the top has browned slightly. Let your baked pasta rest for 5 minutes before serving.
Notes
- Use any good melting cheese like Asiago, Gruyere, or Fontina depending on availability and preference.
- Ready-made lasagne sheets can substitute fresh pasta if pre-boiled briefly and then cut into squares.
- Store leftovers in an airtight container in the fridge for 1-2 days and reheat in a microwave.
