Ingredients
- 8 lices purchased dinner ham
- ½ cup mayonnaise
- ¼ cup spicy whole grain mustard
- 1 tablespoons olive oil
- 1 tablespoons butter
- 4 eggs
- 8 lices marbled rye bread
- 4 lices sharp cheddar cheese
- salt
- pepper
- Tomato slices
- lettuce
Instructions
- Warm the dinner ham according to the package directions.
- In a small bowl, stir together the mayonnaise and mustard. Set aside.
- Add the olive oil and butter to a non-stick skillet set over medium heat. Carefully crack each egg into the pan and cook until the yolk reaches your desired level of doneness. Transfer the fried eggs to a plate.
- Preheat the oven to 400 degrees.
- Lay out 4 slices of bread on a baking sheet. Spread a generous amount of the mayo-mustard mixture on each slice.
- Place one slice of cheese on top of the spread, followed by two slices of ham. Bake until the cheese begins to melt.
- Remove the sandwiches from the oven and add a fried egg on top of each. Season with salt and pepper. Top with sliced ripe tomatoes and lettuce.
- Top each with a second slice of bread generously spread with the mayo-mustard mixture.
Notes
- To store leftovers, wrap them in aluminum foil or place them in an airtight container in the refrigerator. Reheat in the oven or microwave until warmed through.
- To prevent yolks from breaking, crack the eggs into a small bowl first, then gently slide them into the hot pan. Cook on medium heat and avoid flipping for over-easy or sunny-side-up eggs.
