Description
The pease pudding is prepared by simmering yellow split lentils with aromatic vegetables, bay leaves, and smoked bacon until tender. After removing solids and excess liquid, the lentils are pureed into a smooth consistency. Malt vinegar seasons the pudding, balancing the savory bacon and vegetables. This method produces a dense and creamy spread that holds well on bread without being grainy or watery.
Serving involves spreading the chilled pease pudding liberally on bread and layering with sliced ham to create a simple yet flavorful sandwich. The smoky notes from the bacon and the vinegar’s brightness complement the mild lentil base and the ham’s saltiness.
Ingredients
For the pease pudding
- 1 cup split yellow lentils
- 1/2 onion medium, peeled & diced
- 1 carrot small, diced
- 1 celery stick, chopped
- 2 bay leaf
- 2 smoked bacon slices
- 1 tbsp malt vinegar
- salt
- black pepper
For the sandwich
- ham sliced
- bread
Instructions
- Add all the pease pudding ingredients to a pan and cover with 4 cups water. Bring to a boil, then reduce the heat to low and simmer, uncovered for 1 - 1 1/2 hours until the lentils are tender and not grainy.
- Remove the bacon and bay leaves, and carefully pour away any liquid - it'll make the pease pudding too watery. Using a hand blender, blitz into a smooth puree.
- Add the vinegar and check for seasoning, adding a little salt or pepper as you see fit. Decant to a bowl, cover with plastic wrap and refrigerate for a couple of hours or overnight.
- To serve, spread liberally on bread and add slices of ham.
