  • 3 tablespoons olive oil
  • 1 small onion diced
  • 1 pound ground beef 93/7 (see notes)
  • 2 medium potato peeled and diced
  • 2 large carrot peeled and diced
  • 4 cups beef broth
  • 1 cup tomato sauce 8 oz can
  • 2 whole bay leaf
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon Italian seasoning
  • salt to taste
  • black pepper to taste
  • 1 1/2 cups broccoli florets

Instructions

  1. In a large pot, heat olive oil over medium heat. Saute onion for 2 minutes before adding in ground beef. Break meat apart as it browns.
  2. Once onions are soft and meat has browned, stir in potatoes, carrots, beef broth, tomato sauce, bay leaves, garlic powder, Italian seasoning, salt and pepper. Bring to boil then reduce to simmer for 15 minutes.
  3. Stir in broccoli and cook another 10 minutes or until broccoli stems are tender. Serve.
