Hamburger Soup
Description
Hamburger Soup brings together browned ground beef cooked with aromatic vegetables such as onions, carrots, and celery to build a savory base. Garlic adds fragrance before the addition of diced tomatoes, beef broth, diced potatoes, Worcestershire sauce, Italian seasoning, and beef bouillon enhances depth and complexity.
The soup simmers until the potatoes are tender, allowing flavors to meld and the broth to thicken slightly. Green peas are stirred in near the end to maintain their color and sweetness. Fresh parsley sprinkled on top adds a herbal brightness and visual appeal.
This soup works well as a wholesome lunch or dinner, pairing nicely with crusty bread for dipping. It’s versatile, allowing substitutions such as ground turkey, added vegetables, or alternate broth types to suit taste and dietary preferences.
Taste adjustments toward the end help balance seasoning, making it adaptable based on individual preferences or ingredient variations.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion chopped
- 3 medium carrot diced
- 2 talks celery chopped
- 3 cloves garlic minced
- 14 ounces diced tomatoes 1 can
- 4-6 cups beef broth low sodium
- 2 large potato diced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1-2 cubes beef bouillon
- salt to taste
- black pepper to taste
- 1 cup peas frozen
- 2 tablespoons parsley chopped, fresh
Instructions
- In a large pot over medium heat, warm the oil. Add the ground beef and cook until browned, breaking it up with a spatula.
- In the same pot, toss in the onions, carrots, and celery. Cook until the onions become translucent and the veggies soften a bit.
- Stir in the minced garlic and cook just until fragrant—about a minute.
- Add in the diced tomatoes, beef broth, diced potatoes, Worcestershire sauce, Italian seasoning and beef bouillon. Season with salt and pepper. Bring to a boil.
- Reduce heat, cover, and let simmer for about 25-30 minutes or until the potatoes are tender.
- Stir in the green peas and cook for an additional 5 minutes. Taste and adjust the seasoning if needed.
- Ladle the soup into bowls, sprinkle with some freshly chopped parsley, and serve with a side of crusty bread.
Notes
- Ground beef can be substituted with ground turkey or chicken for a leaner protein option.
- Adding vegetables like green beans, corn, or bell peppers can vary flavor and nutrition.
- Beef broth provides richness; chicken or vegetable broth can be used for a lighter soup.
- Adjust the soup thickness by varying broth amount according to desired consistency.
- Always taste near the end and adjust salt, pepper, or Italian seasoning to enhance final flavor.
