Harissa Chicken Thighs

Harissa Chicken Thighs are seasoned with a mixture of melted butter, honey, harissa paste, and lemon juice, then baked skin side up until cooked through and slightly caramelized. The sauce coats the chicken, imparting a balance of heat, sweetness, and acidity. Cooking with skin on and bone in helps retain moisture and develop crispy edges on the skin.

Description

This recipe features bone-in, skin-on chicken thighs coated with a buttery harissa glaze that includes honey and lemon juice. Harissa adds a smoky, spicy depth, balanced by honey’s sweetness and the brightness of lemon. The chicken is laid skin side up on a baking sheet lined with parchment or foil, then baste-coated to maximize flavor and moisture retention while baking at 400°F.

During baking, the chicken is basted one or two times more, helping build a flavorful, sticky coating and encourage even browning of the skin without burning. The recipe advises watching closely near the end to tent with foil if the skin browns too quickly, preserving a tender interior and appealing crisp exterior.

Harissa Chicken Thighs make a hearty main dish suitable for pairing with grains, roasted vegetables, or salads. The balance of spicy, sweet, and tangy flavors delivers a rich, savory experience highlighted by the crispy, juicy texture of the baked thighs.

Ingredients

Servings
  • 2 tablespoons butter melted, unsalted
  • 2 tablespoons honey
  • 2 tablespoon harissa
  • 1 tablespoon lemon juice
  • 6 chicken thighs bone in, skin on
  • kosher salt to taste

Instructions

  1. Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper, Silpat liner, or foil, set aside.
  2. In a small bowl whisk together butter, honey, harissa, and lemon juice.
  3. Lay chicken thighs onto your prepared baking dish and baste each chicken thigh (top and bottom) with the harissa mixture and place back on the sheet pan, skin side up.
  4. Add to the oven, and cook for about 30 minutes, basting the chicken thighs with the remaining harissa mixture 1-2 times while baking.
  5. Keep an eye on the chicken near the end of cooking time to make sure the skin doesn't burn. If the skin starts to brown too fast tent the chicken with foil.
