- 1.3 kg chicken whole

- 1 tablespoon olive oil
- 0.5 lemon (juice only)
- 2 garlic crushed, clove
- 1 pinch sea salt
- 1 pinch black pepper
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- In a bowl, mix together 2 tablespoon Harissa, 1 tablespoon Runny honey, 1 tablespoon Olive oil, juice of 0.5 Lemon, 2 Garlic clove and 1 pinch Sea salt and ground black pepper.
- Place 1.3 kg Whole chicken in a baking dish and pour the mixture onto it, rubbing it in well.
- Put the chicken into the oven and cook for around 90 minutes, or until cooked through.
Notes
- If harissa is too spicy, reduce the amount or use a milder spice blend like pesto with the same method.
- Leftover roasted chicken works well for tacos or enchiladas with your choice of fillings.
