  • 1.3 kg chicken whole
  • 2 tablespoon harissa
  • 1 tablespoon honey runny
  • 1 tablespoon olive oil
  • 0.5 lemon (juice only)
  • 2 garlic crushed, clove
  • 1 pinch sea salt
  • 1 pinch black pepper

Instructions

  1. Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
  2. In a bowl, mix together 2 tablespoon Harissa, 1 tablespoon Runny honey, 1 tablespoon Olive oil, juice of 0.5 Lemon, 2 Garlic clove and 1 pinch Sea salt and ground black pepper.
  3. Place 1.3 kg Whole chicken in a baking dish and pour the mixture onto it, rubbing it in well.
  4. Put the chicken into the oven and cook for around 90 minutes, or until cooked through.

Notes

  • If harissa is too spicy, reduce the amount or use a milder spice blend like pesto with the same method.
  • Leftover roasted chicken works well for tacos or enchiladas with your choice of fillings.
