Hawaiian Macaroni Salad (L&L BBQ Copycat)

This Hawaiian Macaroni Salad combines cooked elbow macaroni with minced onion, shredded carrot, green onion, mayonnaise, and seasonings including white pepper and kosher salt. The pasta is thoroughly cooled and rinsed, then blended with the creamy dressing and chilled to develop its signature creamy texture and mild, tangy flavor.

Description

The recipe begins by cooking elbow macaroni in plenty of salted water until tender, then draining and rinsing well with cold water to stop cooking and remove excess starch. This helps keep the macaroni tender yet separate and prevents clumping. The cooled pasta is mixed with raw minced onion, shredded carrots, sliced green onions, mayonnaise, white pepper, and kosher salt, creating a smooth and creamy dressing.

Chilling the salad for several hours or overnight melds the flavors and firms the texture, making it ideal for serving chilled as a side dish. The taste balances creamy mayonnaise with mild sweetness from the carrots and a subtle peppery note.

This salad is a popular accompaniment to grilled meats or as part of a Hawaiian plate lunch. It is best served well chilled and briefly tossed before serving to refresh texture and flavor.

Ingredients

Servings
  • ½ lb elbow macaroni
  • ¼ cup onion minced
  • 2 TB carrot shredded
  • 1 cup mayonnaise real, whole mayo
  • ¼ cup green onion thinly sliced
  • ½ tsp white pepper
  • 1 tsp kosher salt
  • parsley optional, for garnish, freshly chopped

Instructions

  1. Bring a large pot of well salted water to boil. Cook macaroni until tender, according to package instructions. Drain, rinse thoroughly with cold water; be sure to drain well.
  2. Combine remaining ingredients with the cold, cooked macaroni. Toss to combine well. Chill 2-3 hours or overnight. Toss again right before serving.

Notes

  • Canning pasta water with salt adds flavor directly to the macaroni.
  • Rinsing macaroni with cold water after cooking removes excess starch and stops further cooking, keeping the texture firm and preventing sticking.
  • Chill the salad for at least 2-3 hours or preferably overnight to allow flavors to meld and achieve the classic Hawaiian macaroni salad flavor.
  • Toss the salad again before serving to redistribute dressing and refresh the texture.
