Haystack Cookies

Haystack Cookies combine butterscotch and semi-sweet chocolate chips melted with peanut butter, then mixed with crispy chow mein noodles. The clusters set firm after cooling, offering a crunchy, sweet, and slightly salty treat. These no-bake cookies are good for making ahead and storing, providing a textured snack that's easy to customize with different chips or festive sprinkles.

Description

Haystack Cookies feature a combination of butterscotch and chocolate chips melted smoothly with peanut butter to form a rich, creamy base. Incorporating crunchy chow mein noodles gives the cookies a distinctive crisp texture. The mixture is scooped into clusters on a lined sheet and left to harden at room temperature, resulting in firm, bite-sized treats. The blend of sweet chips and peanut butter provides a balanced flavor with a hint of saltiness from the peanut butter, and the crunchy noodles add contrast to the soft melted coating.

The method avoids baking, making the cookies practical for quick preparation and gentle on heat-sensitive ingredients. They store well in an airtight container for up to two weeks, offering convenience and versatility. Adding sprinkles or swapping in different chip varieties can personalize the appearance and taste.

To keep the clusters intact, it's important to use wax paper or a silicone mat when setting them and to scoop the mixture quickly before it sets. Avoid placing the cookies directly on a pan to prevent sticking. This recipe is suited for making a snack or treat that can be prepared in advance and shared during holidays or casual gatherings.

Ingredients

Servings
  • 1 butterscotch chips 11-ounce bag) (311g, bag
  • 1 cup chocolate chips 180g, semi-sweet
  • 3 tablespoons peanut butter (60g)
  • 1 Chow Mein noodles 12-ounce bag) (338g, bag

Instructions

  1. Line a large baking sheet with wax paper or a silicone baking mat.
  2. In a large bowl, combine butterscotch chips, chocolate chips, and peanut butter. Microwave at 50% powder for 1 minute. Stir. Continue microwaving at 50% power in 30-second intervals, stirring between each, until mixture is smooth and fully combined, about 3 minutes total.
  3. Stir in the noodles until well coated.
  4. Using a large ice cream or cookie scoop, quickly scoop roughly a ¼ cup of the mixture onto the lined baking sheet. Set aside until hardened, about 2 hours. Remove from the sheet and store in an airtight container for up to 2 weeks.

Notes

  • Adding festive sprinkles can customize these cookies for different holidays or occasions.
  • Ensure the mixing bowl is dry to prevent melted chocolate from seizing during microwaving.
  • Use a cookie scoop to handle the sticky cluster mixture and avoid messy hands.
  • Do not place the clusters directly on a baking sheet to prevent sticking; always line with wax paper or a silicone mat.
