Healthy Baked Donuts with Chocolate Glaze
Description
The recipe combines almond flour as a base with eggs, Greek yogurt, and almond milk for moisture and binding. Coconut sugar provides a natural sweetness alongside vanilla extract and a hint of cinnamon for warmth. Leavening agents including baking powder and baking soda create a gentle rise, producing a tender but firm donut shape when baked in a greased donut pan.
Once baked, the donuts cool before dipping in a homemade chocolate glaze composed of melted chocolate chips blended with coconut oil, maple syrup, and almond milk for smoothness. The glaze sets on the donuts, adding a glossy, sweet finish that complements the nutty flavor of the almond flour.
These baked donuts offer a homemade alternative to fried versions with reduced fat from baking and inclusion of wholesome ingredients. They can be decorated further with sprinkles or additional toppings as desired.
Mini donut variations require shorter baking times, and leftovers are best stored at room temperature in an airtight container for a day or two to maintain freshness.
Ingredients
Donuts:
- 2 egg
- 2 ½ tablespoon yogurt I used 2%, plain, Greek
- ⅓ cup almond milk or plant milk
- ½ cup coconut sugar
- 1 ½ teaspoon vanilla extract
- 2 cup almond flour packed, super-fine
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon salt
Frosting:
- ½ cup chocolate chips
- 1 tablespoon coconut oil or butter
- 1 tablespoon maple syrup
- 1 tablespoon almond milk plus more as needed
- 1 teaspoon vanilla extract
- Sprinkles
Instructions
- Preheat your oven to 350°F and generously grease a donut pan.
- In a large mixing bowl, whisk eggs and Greek yogurt until fully combined.
- Add in almond milk, coconut sugar, and vanilla extract. Mix until fully combined.
- Fold in almond flour, baking powder, baking soda, cinnamon, and salt.
- Spoon the batter evenly into the greased donut mold, making 8 - 10 donuts depending on the size of your pan. The batter should fill donut molds to the center but do not cover.
- Bake for full-sized donuts for 15 - 18 minutes until golden brown and toothpick comes out clean.
- Let sit 5 - 10 minutes before removing them from the pan and letting them cool on a wire rack.
- Meanwhile, in a microwave-safe bowl melt the chocolate chips and coconut oil in 20-second intervals so you do not burn the chocolate. Whisk in the maple syrup, almond milk, and vanilla extract (note: can add 1 - 2 more teaspoons of almond milk until desired consistency).
- Dip each cooled donut into the frosting and add sprinkles as desired. Enjoy!
Notes
- Adjust baking time to 11-13 minutes for mini donut pans instead of full-size molds.
- Store leftover donuts at room temperature in an airtight container and consume within 1 to 2 days for optimal texture.
