Healthy Baked Pumpkin Donuts

These Healthy Baked Pumpkin Donuts are made with pumpkin puree, spices, and a blend of flours and sugars. They bake in the oven, resulting in tender donuts with a moist crumb and autumnal flavor from pumpkin pie spice. Using vegetable oil and buttermilk helps keep the donuts soft. They can be made with a donut pan and served as a seasonal breakfast or snack.

Description

Healthy Baked Pumpkin Donuts incorporate pumpkin puree, a blend of white and brown sugars, and spices such as pumpkin pie spice for flavor. The wet ingredients include vegetable oil, eggs, and buttermilk, which keep the donuts moist and tender. The dry ingredients include flour, baking powder, and baking soda to provide rise and structure.

The batter is mixed without overworking to maintain lightness. The donuts are filled into a greased donut pan about two-thirds full and baked at 350°F until a toothpick comes out clean, typically around 15 minutes. The result is a soft, cake-like donut with a subtle pumpkin spice flavor suitable for fall or any time a pumpkin-flavored treat is desired.

These donuts can be served plain or with a glaze of your choice. Once cooled, they can be stored for a few days but are best enjoyed fresh to maintain their delicate texture.
