Healthy Banana Bread with Applesauce
Description
Healthy Banana Bread with Applesauce uses ripe bananas and applesauce alongside Greek yogurt to keep the bread moist and tender without relying on added fats. The combination of baking powder and baking soda helps the loaf rise properly. Chopped walnuts folded into the batter introduce texture and a nutty note. Baking at 350°F for about 50 minutes ensures a golden crust and a fully cooked center, which you can check with a toothpick. Cooling the bread before slicing helps maintain clean cuts.
The flavor is mildly sweet with fruity banana notes complemented by the subtle tang of Greek yogurt, while the walnuts add a pleasant crunch. This banana bread works well served plain or spread with almond butter as a light breakfast or snack option. Its mix of simple flavors makes it a versatile baked good suitable for various occasions.
Using unsweetened applesauce balances the sweetness from the sugar, and you can adjust the type of Greek yogurt based on preference. Cooling completely before slicing prevents crumbling. Walnuts are optional but recommended for added texture. This bread refrigerates and slices well for storing leftovers.
Ingredients
- 3 banana ripe
- 1 cup granulated sugar
- 1/2 cup applesauce unsweetened
- 2 egg
- 1/2 cup Greek yogurt
- 1 tsp vanilla extract
- 1 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup walnuts chopped
Instructions
- Preheat the oven to 350 F. Line a 9X5 loaf pan with parchment paper.
- Mash the bananas using a fork. Mix bananas and sugar until all combined. Add in applesauce and whisk well.
- Add the eggs one at a time and whisk well after each addition.
- Add the Greek yogurt and vanilla extract and mix well.
- Add flour, baking powder and baking soda to the batter, mix until there are no flour lumps left.
- Fold in the walnuts using a wooden spoon. Pour the batter into the prepared loaf pan.
- Bake for 50 minutes until fully baked. Insert a toothpick into the middle of the banana bread. If it comes out clean or with little crumb, it's ready.
- Cool for 10-15 minutes and then transfer to a cooling rack. Let the banana bread cool completely before slicing it.
Notes
- Use unsweetened applesauce to balance the existing sugar in the recipe.
- Non-fat Greek yogurt can be substituted with 1% or whole if preferred.
- Walnuts add crunch but can be omitted if desired.
- Allow the bread to cool completely before slicing to achieve clean slices.
- Serve with almond butter for an added breakfast option.
