  • 3 banana ripe
  • 1 cup granulated sugar
  • 1/2 cup applesauce unsweetened
  • 2 egg
  • 1/2 cup Greek yogurt
  • 1 tsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup walnuts chopped

Instructions

  1. Preheat the oven to 350 F. Line a 9X5 loaf pan with parchment paper. 
  2. Mash the bananas using a fork. Mix bananas and sugar until all combined. Add in applesauce and whisk well. 
  3. Add the eggs one at a time and whisk well after each addition. 
  4. Add the Greek yogurt and vanilla extract and mix well. 
  5. Add flour, baking powder and baking soda to the batter, mix until there are no flour lumps left.
  6. Fold in the walnuts using a wooden spoon. Pour the batter into the prepared loaf pan.
  7. Bake for 50 minutes until fully baked. Insert a toothpick into the middle of the  banana bread. If it comes out clean or with little crumb, it's ready.  
  8. Cool for 10-15 minutes and then transfer to a cooling rack. Let the banana bread cool completely before slicing it. 

Notes

  • Use unsweetened applesauce to balance the existing sugar in the recipe.
  • Non-fat Greek yogurt can be substituted with 1% or whole if preferred.
  • Walnuts add crunch but can be omitted if desired.
  • Allow the bread to cool completely before slicing to achieve clean slices.
