Healthy Banana Mug Cake

This Healthy Banana Mug Cake combines mashed banana, peanut butter, maple syrup, oat flour, and baking powder for a quick microwaved single-serving dessert. The cake rises in the mug, resulting in a moist, soft texture with warming cinnamon and a slight sweetness from the ripe banana and maple syrup. It offers a portable, portion-controlled treat made with simple pantry ingredients that can be ready in minutes.

Description

The recipe starts by mashing a ripe banana directly in a large microwave-safe mug, then adding egg, peanut butter, maple syrup, oat flour, baking powder, cinnamon, and a pinch of salt. The batter is mixed until lumpy and poured with optional toppings like chocolate chips or nuts. Cooking on high power in the microwave for two minutes causes the cake to rise over the rim of the mug without overflowing. The center is checked for firmness and cooked further if needed.

The finished cake has a soft, moist crumb with a natural sweetness from banana and maple syrup, complemented by peanut butter's richness and a hint of cinnamon. Cooling slightly before eating ensures safe handling.

Alternate baking method using an oven is available and may yield a slightly different texture. Recipes can be adjusted for two servings by dividing the batter and cooking in smaller mugs.

Ingredients

Servings
  • 1 large banana
  • 1 large egg
  • 1 tablespoon peanut butter
  • 1 tablespoon maple syrup
  • cup oat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon ground cinnamon
  • salt pinch

Instructions

  1. Place the peeled banana in a large microwave-safe mug (16-ounce or larger) and use a fork to mash until smooth.
  2. Add in the egg, peanut butter, maple syrup, flour, baking powder, cinnamon, and a pinch of salt. Stir well until the mixture looks like a lumpy cake batter. Sprinkle a few chocolate chips or walnuts on top, if you'd like extra texture.
  3. Place the mug in the microwave and cook on high power for 2 minutes. The cake will rise above the top of the mug as it cooks, but it shouldn't spill over as long as you use a 16-ounce or larger size mug. The cake should feel firm to the touch in the center when it's done cooking; add another 30 seconds of cook time if you need to.
  4. Carefully remove the mug from the microwave (it will be hot!) and let it cool for 5 minutes before digging in.

Notes

  • Nutrition data is for one serving without add-ons and is an estimate.
  • Oven baking at 350ºF for about 35 minutes in an oven-safe mug can substitute the microwave method.
  • For two smaller servings, divide batter into two mugs and cook at the same time in the microwave.
  • Updated in July 2023 to improve microwave-ready banana bread texture; original version is flourless and oven-baked.
