Description

The crust and topping are made from a mixture of oat flour, rolled oats, coconut sugar, and sea salt, bound together with solid coconut oil to form a crumble. A portion of this crumble is reserved and mixed with hemp hearts to serve as a crunchy top layer, while the rest is pressed firmly into an 8x8 baking dish forming the base. After pouring the blueberry filling over the crust, the crumble topping is spread evenly over the filling.
Baked at 350°F, the bars develop a golden, crisp crust and a soft, juicy interior from the fruit. The combination balances sweet and tart flavors with a textured oat crust and topping. The lemon zest brightens the flavor profile while the coconut oil adds moisture and richness. These bars can be served as a snack or dessert offering wholesome ingredients and satisfying textures.
Ingredients
Crumble
- 1 cup oat flour
- 1 cups rolled oats old fashioned
- ½ cup coconut sugar
- ½ teaspoon salt sea salt
- 6 Tablespoons coconut oil room temperature/solid
- 2 Tablespoons hemp hearts
Blueberry Filling
- 2 cups blueberries fresh or frozen
- lemon zest of one
- 2 Tablespoons water
- 1 Tablespoon arrowroot powder or cornstarch
Instructions
- Preheat oven to 350°F. Line a square 8x8 baking dish with parchment paper or spray with cooking spray.
- Add blueberries, lemon zest, water and arrowroot powder to a saucepan. Bring to a boil over medium-high heat. Reduce heat to a simmer and stir constantly for about 3-5 minutes or until mixture has thickened and some of the blueberries have started to pop. You want your mixture to coat the back of a spoon without being too drippy. Remove from heat and set aside.
- Combine oat flour, rolled oats, coconut sugar and sea salt in a medium mixing bowl.
- Add coconut oil to the mixture and using your hands or a spoon combine mixture until it forms into a crumble.
- Measure out ⅔ cup of the oatmeal crumble mixture for the topping into small bowl and stir in the hemp hearts.
- Add remaining oatmeal crumble mixture to the prepared baking dish and evenly press into down using your hands to form the crust.
- Pour blueberry filling on top of your crust
- Sprinkle the oatmeal and hemp crumble on top
- Bake for 35-40 minutes until the bars are golden brown on top and the blueberry filling is bubbling and sticking to the edges of the pan. Remove from oven and place on a wire rack to cool completely. Be patient, if you don’t let them cool before removing them from the pan they will fall apart.
- Once cool, cut into 12 bars and enjoy right away or chill in the fridge before serving. I personally like the bars chilled, after they've been in the fridge for a bit.
