These Healthy Blueberry Muffins are light and fluffy and naturally sweetened with fruit - no added sugar, and they are SO easy to make.

Ingredients
- 230 ml skimmed milk
- 1 egg
- 2 tablespoon coconut oil melted
- 1 teaspoon vanilla extract
- 75 g liquid sweetener
- 120 g plain flour
- 120 g oats
- 1 pinch sea salt
- 1 tablespoon baking powder
- 200 g blueberries

Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- In a bowl combine 230 ml Skimmed milk, 1 Egg, 2 tablespoon Coconut oil, 1 teaspoon Vanilla extract and 75 g Liquid sweetener.
- In a large mixing bowl, add 120 g Plain flour, 120 g Oats, 1 pinch Sea salt and 1 tablespoon Baking powder.
- Add the milk and egg mixture and combine well.
- Add 200 g Blueberries and mix in.
- Divide the batter into a greased muffin tin and put into the oven for 20 minutes.
- Allow to cool slightly before transferring to a cooling rack.
Notes
- Make sure you save some blueberries to dot on the top of the muffins to make them look nice.
- You could sprinkle some oats on top for presentation too.
- Make sure you don't over-mix the flour into the rest of the ingredients, otherwise the muffins will be too dense
- For an added warm flavour, add 0.5 tablespoon of cinnamon to the mixture.
