Ingredients

Servings
  • 6-7 cups peaches blueberries, or a combination of the two (I didn’t even peel the peaches, but you can if that’s your preference, sliced
  • 3 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/3 cup whole wheat flour can substitute with all-purpose flour if desired
  • 2 tablespoons wholegrain cornmeal
  • 1 tablespoon sugar xylitol, or stevia
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons butter
  • ¼ cup milk

Instructions

  1. Preheat oven to 400 degrees F.
  2. Spray an 8-inch square baking dish with cooking spray and set aside.

Prepare the filling:

  1. In a large bowl, toss together peaches, blueberries, cornstarch, cinnamon, and vanilla extract until completely combined and cornstarch is dissolved. Pour filling into prepared dish.
  2. Place the dish in the oven to bake while you prepare the topping (about 5 minutes).

Prepare the biscuit topping:

  1. In a large bowl, whisk together flour, cornmeal, sugar, baking powder, and salt. Use a pastry cutter, two knives, or your fingertips to cut in the butter until the largest pieces are about the size of peas. Add the milk and stir until just combined (the batter will still be lumpy – be careful not to overmix).
  2. Remove filling from the oven. Use a tablespoon to drop topping onto the hot filling. Return dish to the oven and bake until biscuit topping is golden brown (about 20-25 minutes).
