Healthy Brownie Batter (Protein Packed!)

This Healthy Brownie Batter blends canned pumpkin, nut butter, cocoa powder, and protein powder into a thick, protein-rich mixture. Sweetened with granular sweetener and sugar-free syrup, it's a versatile and creamy snack that can be enjoyed with pretzels, cookies, or fruit, or even used as frosting. The batter benefits from chilling to meld flavors and improve texture.

Description

The Healthy Brownie Batter uses canned pumpkin and nut butter to create a moist base mixed with cocoa powder and a scoop of vanilla or chocolate protein powder, adding protein and depth. Sweetness comes from granular sweetener and sugar-free pancake syrup, balanced by vanilla extract and a touch of optional salt.

Prepared by blending all ingredients until thick and uniform, the batter is best chilled for at least an hour, allowing the flavors to develop further—overnight refrigeration is ideal. The resulting mixture is creamy and thick, suitable as a dip or spread.

Enjoy it paired with salty snacks like pretzels or use it as a topping on baked goods. The recipe suggests using vegan protein powder and replacing syrup with maple syrup for a vegan version, offering dietary flexibility.

Ingredients

Servings
  • 1/2 cup canned pumpkin 122g
  • 1/4 cup nut butter 56g
  • 1/4 cup cocoa powder 40g
  • 1 coop vanilla protein powder or chocolate protein powder, 31g
  • 1/4 cup granular sweetener I used Swerve, 36g
  • 1/4 cup pancake syrup sugar-free, 60g
  • 1 tsp vanilla extract
  • salt optional, dash

Instructions

  1. Combine all the ingredients in a food processor (or mix with a hand mixer) until everything is incorporated and you have a thick batter.
  2. Store in the fridge for at least an hour to allow the flavors to come together more. For best results, let sit overnight!
  3. Enjoy with pretzels, cookies, graham crackers, fruit, or even use as a frosting. Get creative with it! Keep stored in the fridge.

Notes

  • Refrigerate the batter for at least an hour or overnight for improved flavor and texture.
  • To make vegan, use a plant-based protein powder and substitute maple syrup for the sugar-free syrup.
