Description
These Healthy Brownies begin by thoroughly beating eggs and coconut sugar until light and frothy, which helps form the characteristic shiny crust on top. Coconut oil and dark chocolate chips are melted together and then added to the batter along with vanilla extract, cocoa powder, and tapioca flour to provide structure and a tender crumb.
The batter is poured into a parchment-lined baking pan and optionally topped with extra chocolate chips for added chocolate pockets. Baking at 350°F for about 24-27 minutes allows the brownies to become set with moist crumbs when tested by toothpick. A sprinkle of sea salt on top enhances the chocolate flavor.
The finished brownies have a moist, tender texture with rich chocolate notes and a slightly chewy top. Allowing them to cool fully before slicing helps them set properly. These brownies keep well at room temperature for up to three days and can also be chilled or frozen for longer storage.
Ingredients
- 1 cup coconut sugar
- 2 egg
- ½ cup coconut oil melted
- 1 cup dark chocolate chips
- 1 tsp vanilla extract
- 2 tbsp cocoa powder
- ¼ cup tapioca flour or cornstarch

Instructions
- First, preheat oven to 350 degrees Fahrenheit. Line an 8 inch by 8 inch pan with parchment paper.
- In a large mixing bowl, add eggs and coconut sugar. Use a hand mixer to beat together for 2 to 3 minutes, until light and frothy.
- In a skillet over low heat, add melted coconut oil and chocolate chips. Stir constantly until fully melted and creamy. Or, microwave in 30 second increments.
- Pour melted chocolate mixture into the mixing bowl. Stir to combine.
- Add in vanilla, cocoa powder and tapioca flour. Stir to combine.
- Pour batter into the lined baking pan. Dot with extra chocolate chips on top if desired.
- Bake for 24 to 27 minutes or until toothpick inserted comes out with moist crumbs.
- Finally, remove from oven. Garnish with sea salt if desired. Allow brownies to cool before slicing into.
Notes
- Beat eggs and coconut sugar for 2-3 minutes using an electric mixer to help develop the shiny top crust; mixing by hand is not recommended.
- Melt coconut oil and chocolate chips together, stirring constantly to avoid burning.
- Do not overbake; a toothpick inserted should come out with moist crumbs for best texture.
- Allow brownies to cool completely before slicing to let them set properly.
- Store at room temperature for up to 3 days or chill as preferred.
- Brownies can be frozen for up to 1 month.
