Healthy Buckeyes

Healthy Buckeyes combine creamy all-natural peanut butter with maple syrup, vanilla, and almond flour to form soft, cookie dough-like balls. These are cooled, then dipped in melted dark chocolate mixed with coconut oil for a smooth coating. The resulting treats balance nutty, sweet, and rich chocolate flavors with a tender texture, offering a refined alternative to traditional buckeyes without added sugars or artificial ingredients.

Description

This recipe starts by mixing all-natural creamy peanut butter with pure maple syrup and vanilla extract to achieve a smooth base. Almond flour and salt are incorporated to create a dough with a soft, pliable consistency similar to cookie dough. The dough is shaped into small balls, chilled to firm them up, and then smoothed out before dipping into melted dark chocolate combined with coconut oil for a glossy finish.

The chocolate coating hardens quickly and provides a crisp shell contrasting with the creamy peanut butter center. The use of dark chocolate adds intensity and balances the sweetness from maple syrup. Coconut oil in the chocolate helps achieve a smoother dip and thinner coating.

These buckeyes can be served chilled or at room temperature. They make a convenient and portioned treat, with options for almond-free substitutions noted. Proper storage in the fridge or freezer prolongs freshness and easy access.

Ingredients

Servings
  • 1 cup peanut butter just peanuts, nothing added, all-natural creamy
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup almond flour Bob's Red Mill Super Fine, 2 tablespoons
  • 1/4 teaspoon salt if using unsalted peanut butter, fine sea salt
  • 8 ounces dark chocolate equal to about 1 heaping cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Make peanut butter dough: In a medium bowl, combine peanut butter with maple syrup and vanilla extract until smooth. Add in almond flour and salt, combining until dough forms (use hands at end as needed). You should have a soft cookie dough-like texture.
  2. Roll into balls: Using small cookie scoop (about 1 heaping tablespoon), scoop dough onto parchment lined baking sheet. Roll dough ball until smooth and place back on the baking sheet. Place in freezer for 20 minutes. After 20 minutes, roll again getting the balls really smooth, then place back in fridge while you melt chocolate.
  3. Melt chocolate: Meanwhile, melt chocolate over low heat, stirring until smooth and fully melted. If you want a smoother chocolate, add coconut oil. Transfer chocolate to a heat proof small deep bowl (if possible – this will allow you to get a good dip in without messing with the dough ball too much).
  4. Dip peanut butter balls: Using a toothpick, dip peanut butter balls into melted chocolate and set back onto parchment paper baking sheet. Option to gently smooth over toothpick hole if you’d like.
  5. Chill: Place cookie sheet in fridge until chocolate has fully set, about 15 minutes or so. Enjoy!

Notes

  • This recipe is adaptable for those avoiding almonds by substituting oat flour in place of almond flour.
  • For peanut-free versions, consider creamy cashew, almond, tahini, or sunflower butters as alternatives, ensuring they are smooth.
  • Store buckeyes in an airtight container in the refrigerator for up to 3 weeks to maintain quality.
  • Bucket frozen buckeyes in freezer-safe containers or bags for up to 3 months to extend shelf life.
  • Nutrition details are approximate and calculated per individual buckeye ball.
