  • 8 cups vegetable broth low sodium
  • 1 cup carrot chopped
  • 1 cup parsnip chopped
  • 1 cup celery , chopped
  • 2 tablespoons tomato paste , optional
  • 1/2 cabbage cut into 1-2 inches pieces, head
  • 1 clove garlic , grated
  • 1/2 cup white onion , chopped
  • 14.5 ounces petite tomatoes drained, canned
  • 2 tablespoons lemon juice
  • 1/4 teaspoon chili powder
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large stock pot or Dutch oven, bring the 8 cups low sodium vegetable broth to a rapid boil and then add the sliced 1 cup carrots, sliced 1 cup parsnips and chopped 1 cup celery and optionally, the 2 tablespoons tomato paste.
  2. Boil until soft, approximately 10 minutes.
  3. Add the cut 1/2 head cabbage, minced or pressed 1 clove garlic , chopped 1/2 cup white onion14.5 ounces canned petite tomatoes2 tablespoons lemon juice and 1/4 teaspoon chili powder. Continue to cook over low heat until the cabbage just starts to soften, approximately 5 minutes.
  4. Season to taste with Salt and Pepper. Serve.
