Description
This recipe begins by boiling an ample volume of low-sodium vegetable broth to quickly cook sliced carrots, parsnips, and chopped celery until tender. Tomato paste can be added to deepen the flavor. Then, chopped cabbage, grated garlic, chopped white onion, and canned petite tomatoes are introduced, simmering gently until the cabbage softens.

Ingredients
- 8 cups vegetable broth low sodium
- 1 cup carrot chopped
- 1 cup parsnip chopped
- 1 cup celery , chopped
- 2 tablespoons tomato paste , optional
- 1/2 cabbage cut into 1-2 inches pieces, head
- 1 clove garlic , grated
- 1/2 cup white onion , chopped
- 14.5 ounces petite tomatoes drained, canned
- 2 tablespoons lemon juice
- 1/4 teaspoon chili powder
- salt to taste
- black pepper to taste
Instructions
- In a large stock pot or Dutch oven, bring the 8 cups low sodium vegetable broth to a rapid boil and then add the sliced 1 cup carrots, sliced 1 cup parsnips and chopped 1 cup celery and optionally, the 2 tablespoons tomato paste.
- Boil until soft, approximately 10 minutes.
- Add the cut 1/2 head cabbage, minced or pressed 1 clove garlic , chopped 1/2 cup white onion14.5 ounces canned petite tomatoes2 tablespoons lemon juice and 1/4 teaspoon chili powder. Continue to cook over low heat until the cabbage just starts to soften, approximately 5 minutes.
- Season to taste with Salt and Pepper. Serve.
