Healthy Chicken Tortellini Soup
Description
This soup begins by sautéing diced carrots, quartered onions, and diced celery in butter until tender. Mushrooms and shredded rotisserie chicken are added as the vegetables soften. The base is seasoned with allspice, Italian seasoning, and bay leaves, then combined with chicken broth to simmer and develop flavor.
Once the soup simmers, prepared cheese tortellini is stirred in to add a soft, chewy pasta component. The bay and celery leaves used for seasoning are removed before serving. The broth is rich yet balanced, flavored with herbs and hearty vegetables, complemented by tender chicken pieces and pasta.
The soup is best served hot with warm bread, crackers, or croutons for soaking up the flavorful broth. Using rotisserie chicken provides convenience, but if using fresh cooked chicken breast, it should be added just before serving to avoid drying out. Regular chicken broth is recommended to maintain flavor intensity.
Leftovers can be refrigerated safely for up to 5 days or frozen for extended storage up to 3 months.
Ingredients
- 2 white onions cut into quarters, medium
- 3-5 carrot peeled, large
- 4 celery diced, stalks
- 1 butter stick
- celery leaves used for seasonings, removed before serving, handful, washed
- 1 package 16oz sliced mushrooms
- 2 chicken broth NOT low sodium, boxes
- 1 rotisserie chicken alt: 2 cups diced chicken breast
- 1 cheese tortellini package
- 1 tablespoon allspice
- 3 tablespoons Italian seasoning
- 2 bay leaf for extra flavor
- salt I use about 1 teaspoon of each, to taste
- black pepper I use about 1 teaspoon of each, to taste
Instructions
- Prep the ingredients: peel and chop carrots into coins, dice onions into quarters, and slice mushrooms.
- In a dutch oven over medium heat, melt the butter and saute the carrots, onions, and celery.
- Add mushrooms and shredded chicken after vegetables are nearing desired tenderness (approx. 8-10 minutes). NOTE: if you are not using rotisserie chicken, wait to add it before serving. Cooked chicken will dry out significantly if added before.
- Add seasonings and broth. Let simmer on low for 20-30 minutes. The longer you let it simmer, the better the flavors are!!
- Separately, prepare the tortellini according to package instructions and add to the soup once cooked. Remove the bay leaves and celery leaves prior to serving.
- Serve with warm bread, crackers, or croutons. Enjoy!
Notes
- Use rotisserie chicken for convenience; if using cooked chicken breast, add just before serving to avoid drying.
- Do not use low sodium chicken broth; standard broth gives more flavor.
