Healthy Chinese Chicken Salad with Peanut Dressing

Protein packed with chicken over fresh greens and vegetables and topped with a homemade easy peanut dressing. Great main meal or meal prep in advance for lunch.

Ingredients

SALAD

  • 8 cups mix of romaine lettuce napa cabbage, green cabbage chopped
  • ½ cup thinly sliced purple cabbage
  • ½ cup julienne carrot sliced
  • ½ cup thinly sliced red bell pepper
  • 3 green onions sliced
  • 1 cup mandarin oranges sugar free drained well
  • 1 cup dy roasted peanuts
  • 1 cup wonton strips
  • 3 cups rotisserie chicken sliced or cubed
  • Sesame seeds for garnish

Peanut Dressing

  • ½ cup extra virgin olive oil
  • ¼ cup creamy peanut butter sugar free
  • 2 Tablespoons soy sauce reduced sodium
  • 1 tablespoon rice vinegar
  • ½ teaspoon sesame oil
  • 1 clove garlic minced
  • 1/4 teaspoon crushed red pepper flakes
  • salt and black pepper to taste

Instructions

  1. In a small bowl whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, garlic, red pepper, salt & pepper. Or Place ingredients in a Mason jar, cover with a lid and shake ingredients together.
  2. Clean lettuce and cabbage and chop into bite size pieces.
  3. Slice vegetables; red bell pepper, carrots, green onions.
  4. Place salad in individual serving bowls or in a large salad bowl. Top with prepared chicken, mandarin oranges, peanuts, and green onions. Sprinkle each serving with sesame seeds.
  5. If serving in individual add peanut dressing to each bowl. Or toss dressing with salad ingredients in a large salad bowl.

Notes

  • ¼ teaspoon garlic powder can be used in place of the chopped garlic clove.
  • Sliced sweet orange segments can be used in place of mandarin oranges.
  • For a no fuss meal purchase salad bags; Romaine and Asian salads. Mix the two.
  • To lower the carbohydrates serve without wonton strips.
