Healthy Cookie Dough Bars

These Healthy Cookie Dough Bars combine almond flour and cashew butter into a dense, scoopable dough folded with vegan mini chocolate chips, then chilled until firm. A thin layer of melted chocolate with coconut oil adds a smooth, slightly glossy top once chilled again. The bars have a rich, nutty flavor with a mildly sweet finish from stevia and the chocolate. They make a satisfying treat when you want a no-bake, freezer-hardened snack with a chewy and firm texture.

Description

Healthy Cookie Dough Bars bring together almond flour and cashew butter to create a dough that sets firmly in the freezer, making it easy to slice into bars. Vanilla and stevia provide a gentle sweetness without using traditional sugar. The inclusion of mini vegan chocolate chips throughout adds occasional bursts of chocolate. After pressing the dough into a loaf pan and freezing it to firm up, a melted chocolate topping mixed with coconut oil is spread thinly on top. This topping quickly hardens when chilled again, providing a contrasting smooth layer. The bars can be enjoyed straight from the freezer as a cool, rich snack or treat.

The texture is both dense and firm with a slight chew from the almond flour and nut butter base. The chocolate topping hardens into a thin shell that enhances each bite. The stevia sweetener allows the dessert to have sweetness without added sugar content, suitable for those monitoring sugar intake.

Serve these bars chilled or frozen as a simple, handheld snack. Because the bars are kept in the freezer, they maintain their firm shape and refreshing quality until ready to eat.

You can adjust the sweetness or chocolate component by using stevia-sweetened chocolate chips or making your own chocolate coating using cocoa powder, coconut oil, and stevia. This flexibility lets you tailor the recipe more to your sugar preferences.

Ingredients

Servings

Cookie Dough:

  • 2 cups almond flour
  • 1/3 cup cashew butter almond or peanut butter will work too
  • 1/4 cup coconut oil melted
  • 2 teaspoons vanilla
  • 1 teaspoon stevia Wholesome Organic brand
  • 1/2 teaspoon salt omit or reduce if your cashew butter has salt, sea salt
  • 1/4 cup chocolate chips mini, vegan

Chocolate Topping:

  • 1/3 cup chocolate chips mini, vegan
  • 1 teaspoon coconut oil

Instructions

  1. In a mixing bowl, stir together the dry ingredients (almond flour, stevia and salt). Set aside. In another mixing bowl, stir together the wet ingredients (cashew butter, coconut oil and vanilla). Add dry ingredients to the wet ingredients and stir to combine. Fold in chocolate chips.
  2. Line a loaf pan with parchment paper and spread the cookie dough into the pan. Press the mixture down well that sticks together well. Place loaf pan into the freezer and let the bars herded up for about 1 hour.
  3. Remove bars from the freezer and melt chocolate chips by placing them in a small microwave save bowl with 1 teaspoon coconut oil. Microwave for 30 second intervals, stirring after every interval until the chocolate chips have melted. This shouldn’t take more than 1 minute. Once melted, pour chocolate over the hardened cookie dough and spread so the bars are coated in a thin layer of chocolate. Place loaf pan back into the freezer for 10-20 minutes to allow the chocolate to harden.
  4. Once the chocolate has set remove bars from the loaf pan, by pulling up the parchment and cut the bars into squares. Enjoy right away and store any leftover bars in the freezer or fridge.

Notes

  • Press the cookie dough firmly into the pan to ensure the bars stick together well when frozen.
  • Use stevia-sweetened chocolate chips or create a homemade chocolate coating with cocoa powder, coconut oil, and stevia to reduce sugar content.
  • Freeze the bars until fully firm to make them easier to cut and handle.
