Ingredients
- 2 lb. ground beef I used 96/4, lean
- 1 yellow onion diced, small, 170g
- 1 taco seasoning use water according to packet
- 1 Tbsp chili powder
- 1/2 tsp salt
- 24 oz. salsa mild, chunky, jar
- 3/4 cup corn frozen or canned, 127g
- 1 (15.5-oz.) black beans canned, drained and rinsed
- 2-3 Tbsp cilantro chopped - can omit, fresh
- 1.5 cup Mexican shredded cheese 168g
To Serve:
- 4 cups Doritos slightly crushed - about a 1/2 cup (25g) per serving, mini or regular, 200g
Instructions
- Preheat the oven to 375 degrees F. Spray a 9x13-inch baking dish with cooking spray.
- Add the ground beef to a large skillet and set to medium heat. After 3-4 minutes add the onion and cook until the onion is tender and the beef is brown. Drain any excess liquid then stir in the taco seasoning, water, chili powder and salt.
- To the greased baking dish, add the cooked beef and onions, salsa, corn, black beans, cilantro and 1/2 cup of the shredded cheese. Mix then spread out evenly. Top with remaining 1 cup shredded cheese.
- Bake uncovered for 10 minutes. Top with Doritos, cilantro, sour cream and whatever else sounds yummy and enjoy!
Notes
- To prevent soggy toppings, add Doritos just before serving to keep them crisp.
