Healthy Doritos Pie Casserole

This casserole layers seasoned ground beef, onions, salsa, corn, black beans, cilantro, and shredded Mexican cheese, all baked until bubbly and topped with crispy Doritos right before serving. The combination delivers a hearty texture contrast between the warm, saucy filling and the fresh crunch of Doritos. It’s a satisfying meal that balances protein and beans with familiar taco flavors, great for casual family dinners or gatherings.

Description

Healthy Doritos Pie Casserole starts by browning lean ground beef with diced onions and mixing in taco seasoning, chili powder, and salt for robust southwestern flavor. The meat mixture is combined with chunky mild salsa, corn, black beans, fresh cilantro, and shredded Mexican cheese, then baked uncovered to melt cheese and heat through. The finishing touch is adding crushed Doritos immediately before serving to preserve their crisp texture, enhancing the dish with a crunchy contrast. The casserole blends creamy melted cheese and hearty beans with beef and salsa for a filling, flavorful dish that brings taco-inspired ingredients into an easy-to-serve baked meal.

The baking time is short at 10 minutes, ensuring the flavors meld without overcooking. The recipe suggests serving with additional cilantro and sour cream if desired, which add freshness and creaminess alongside the spicy notes. This dish suits those looking for a casual casserole with familiar Tex-Mex seasonings and a distinctive crunch from the Doritos topping.
