Healthy Greek Yogurt Brownies

These brownies use nonfat vanilla Greek yogurt along with dark chocolate and coconut sugar to create a moist, rich chocolate treat. The combination of cocoa powder and melted dark chocolate ensures deep chocolate flavor, while the Greek yogurt adds moisture and a slight tang without added fat. They bake to a fudgy texture with chunks of chocolate inside for added bite. Cooling them in the fridge before slicing helps set the brownies well.

Description

Healthy Greek Yogurt Brownies are made by combining Greek yogurt, coconut sugar, and eggs, then incorporating melted dark chocolate and coconut oil. Cocoa powder, cornstarch, baking soda, and salt build the structure and enhance the chocolate taste. The remaining chopped chocolate folded in before baking adds texture with melty pockets of chocolate. The brownies bake at a moderate temperature until a toothpick comes out clean, ensuring they are cooked through but still fudgy inside.

Once baked, chilling the brownies briefly in the refrigerator firms them up, making slicing easier and helping the texture set. These brownies provide a chocolatey dessert that uses Greek yogurt to keep the fat content moderate while preserving moisture. They work well as an everyday indulgence or a snack with coffee.

Ingredients

Servings
  • 2/3 cup Greek yogurt nonfat, vanilla
  • 1/4 cup coconut sugar
  • 2 egg large
  • 5 ounces dark chocolate divided
  • 2 tablespoons coconut oil
  • 1/2 cup cocoa powder (42 grams)
  • 1 tablespoon cornstarch (9 grams)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Heat your oven to 325°F and line an 8x8-inch pan with parchment paper.
  2. In a large bowl, whisk together the yogurt, sugar, and eggs.
  3. Place 4 ounces of the chocolate and the coconut oil into a small, microwave-safe bowl and microwave until smooth and melted, about 1 minute. Whisk into the egg mixture.
  4. Whisk in the cocoa powder, cornstarch, baking soda, and salt. Roughly chop the remaining chocolate and stir it in.
  5. Spread into the pan and bake until a toothpick inserted in the center comes out clean, about 22-23 minutes. Do not overbake!
  6. Immediately transfer into the fridge (I put them on a cooling pad) for 15 minutes.
  7. Remove and finish cooling on the counter completely before slicing.
