Ingredients

  • 35 g dark chocolate for melting
  • 35 g dark chocolate chopped into small chunks; to mix in
  • 2 tablespoon coconut oil
  • 180 g Greek yogurt 0% fat free
  • 1 egg
  • 1 pinch salt sea salt
  • 50 g oat flour
  • 20 g cacao powder
  • 60 ml milk skim
  • 120 g granulated stevia
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking powder

Instructions

  1. Preheat the oven to 180°C/160°C(fan)/350°F/Gas 4. Line a 8x6 pan with parchment paper.
  2. Melt 35 g Dark chocolate with 2 tablespoon Coconut oil and set aside.
  3. In a large mixing bowl, mix together 50 g Oat flour, 20 g Cacao powder, 1 pinch Sea salt, 120 g Granulated stevia and 0.5 teaspoon Baking powder.
  4. In a separate bowl, mix together 180 g 0% Fat Free Greek yogurt, 1 Egg, 60 ml Skim milk and 1 teaspoon Vanilla extract. Add the chocolate and coconut oil mixture and combine.
  5. Fold the wet ingredients into the dry and then fold in 35 g Dark chocolate.
  6. Pour the brownie batter into the lined pan and sprinkle a few more bits of chocolate on top.
  7. Put into the oven for 30-35 minutes. The time will depend on your oven, and the pan used. When a knife or toothpick comes out mostly clean, it is done.
  8. Allow to cool before cutting.

Notes

  • Make sure you let the melted chocolate mixture sit for 2 minutes before folding it into everything, because you don't want the yogurt to curdle.
  • Your chocolate brownies with yogurt will still look a little wobbly/jiggly when they come out of the oven (but shouldn't be really wobbly), as they will still continue cooking as they cool down. You don't want to over-cook these.
  • Every oven cooks differently, so start checking on these at 25 minutes. They could also take up to 40 minutes.
  • You can use brown sugar in this recipe if you want a more caramlized flavor.
