  • 1 cup whole-wheat pasta cooked
  • 1 ounce mozzarella cheese sliced
  • 1 to 2 cups broccoli chopped, florets
  • pepperoni quartered, nitrate-free, sliced
  • 3 to 4 black olives sliced
  • 3 to 4 cherry tomato halved
  • 1 to 2 tablespoons Italian dressing or plain olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. In a medium bowl, combine all the ingredients. Refrigerate for up to 3 days or pack inside a lunch box.
