Description
The recipe combines peanut butter with two types of sweeteners (granulated and brown sugar substitutes can be used), eggs, and vanilla extract to create a moist base. Rolled oats and oat flour provide structure and chewy texture, supported by baking soda for leavening and a pinch of salt to balance sweetness. Chocolate chips folded in add richness and bursts of sweetness. After mixing, the batter is spread evenly in a parchment-lined baking dish and baked until the edges are golden but the center remains soft to maintain chewiness.
Once cooled for at least 30 minutes, the bars firm up, allowing clean slices for serving. These bars work well as an easy-to-have snack or a quick treat, offering a richer alternative to cookies with a heartier oat presence. Variations to make them gluten- or dairy-free are possible by using certified gluten-free oats and dairy-free chocolate chips.
Ingredients
- 1 cup peanut butter 224g
- 1/4 cup granulated sweetener I used Monk fruit sweetener, or sugar, 48g
- 1/4 cup brown sugar sweetener I used Monk Fruit golden classic, 48g
- 2 egg large
- 2 tsp vanilla extract
- 1 cup rolled oats old fashioned, 80g
- 1/2 cup oat flour 64g
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 cup chocolate chips divided, 60g
Instructions
- Preheat oven to 350 degrees F. Line a 8x8” dish with parchment paper.
- To a medium-sized bowl, add the peanut butter, both sweeteners, eggs, and vanilla and whisk to combine.
- Add the oats, oat flour, baking soda and salt and mix using a spatula or spoon until all ingredients are incorporated. Then fold in half of the chocolate chips.
- Transfer mixture to the lined dish and smooth the top so it’s even. Sprinkle the remaining chocolate chips on top.
- Bake for 18-20 minutes or until the edges start to turn golden brown. It will still look underdone when you take it out, but it will set as it sets and this is how you keep it gooey!
- Let cool for at least 30 minutes then cut into bars and enjoy!
Notes
- For gluten-free bars, use certified gluten-free oats and oat flour.
- Dairy-free chocolate chips can be substituted to make the bars dairy-free.
