Healthy Pumpkin Bars

These healthy pumpkin bars combine whole wheat pastry flour, pumpkin puree, and pumpkin pie spice with coconut sugar and yogurt for a moist, warmly spiced treat. Dark chocolate chips mixed in add occasional richness and texture. Baked as a sheet and cut into bars, this recipe yields a tender, cake-like dessert or snack with autumnal flavors.

Description

Healthy Pumpkin Bars use whole wheat pastry flour to create a softer crumb compared to regular whole wheat flour, while pumpkin puree adds moisture and subtle sweetness. Pumpkin pie spice, consisting of cinnamon and other warm spices, provides characteristic autumn flavor. Coconut sugar supplies a less refined sweetness, complementing the yogurt’s moisture and slight tang. Coconut oil enriches the batter, and eggs or flaxseed eggs bind the ingredients. Chocolate chips incorporated throughout offer bursts of bittersweet flavor.

The batter bakes in a sheet pan, resulting in bars that are tender and moist with a soft crumb. These bars can serve as a snack, breakfast treat, or dessert, especially during fall or for pumpkin lovers wanting a less sugary option.
