Healthy Rice Krispie Treats
Description
Healthy Rice Krispie Treats use almond butter, honey, and solid coconut oil whipped together until smooth and slightly foamy, which acts as a natural binder for the brown rice cereal. The mixture is gently combined by hand with the cereal to evenly coat all pieces without crushing them. It’s pressed into a pan lined with coconut-oiled parchment for easy removal and chilled until firm.
The resulting treats have a chewy texture from the almond butter and honey, with the crispness of the brown rice cereal adding contrast. They are sweetened naturally without marshmallows or refined sugars.
Cutting into 16 even squares after chilling makes for convenient snack portions. The use of almond butter and coconut oil introduces a richer, nutty flavor profile compared to classic Rice Krispie treats.
Ingredients
- ½ cup almond butter runny consistency is best
- ⅓ cup honey
- ¼ cup coconut oil solid, plus more for the pan
- 4 cups brown rice cereal
- pinch salt
Instructions
- Line an 8-inch baking pan with parchment paper, leaving a slight overhang on all 4 sides so you can easily remove the treats once set. Lightly coat the parchment paper with coconut oil.
- Add almond butter, honey and coconut oil to the bowl of a stand mixer fitted with the whisk attachment. Whip at medium speed for about 3 to 5 minutes, or until the mixture is combined and the coconut oil has melted and started to foam slightly
- Remove the bowl from the mixer and add the rice cereal to the almond butter mixture. Use your hands to fold the cereal in until it’s evenly coated.
- Scrape the mixture into the prepared pan, and very gently press into an even layer. Let set in the fridge for 30 minutes or until firm, then cut into 16 even squares.
