Description
The Healthy S'mores Brownies recipe starts with a batter combining eggs, melted coconut oil, coconut sugar, maple syrup, and vanilla extract for moisture and sweetness. Almond flour and cocoa powder provide structure and chocolate flavor without traditional flour. Salt enhances the overall taste. Chocolate chips are folded in to create melty chocolate spots throughout the dense, tender brownies. The batter is spread evenly in a parchment-lined 8x8 inch pan and baked until set but still moist.
After initial baking, a topping made of mini marshmallows, crumbled graham crackers, and extra chocolate chips is added. The brownies return to the oven under a low broiler just until the marshmallows toast lightly. This final step mimics the classic s'mores texture and taste, adding a fluffy and slightly charred sweetness along with crunchy cracker bits on top of the fudgy base.
The brownies cool after broiling, allowing the topping to set slightly but remain melty and soft. Ingredients
Brownies:
- 2 egg
- ⅓ cup coconut oil melted
- ½ cup coconut sugar
- ¼ cup maple syrup 100% pure
- 1 teaspoon vanilla extract
- 1 cup almond flour packed
- ¼ cup cocoa powder
- ¼ teaspoon salt
- ⅓ cup chocolate chips
S’mores Topping:
- 2 - 3 graham crackers
- ½ cup mini marshmallows
- chocolate extra squares or chips
Instructions
- Preheat your oven to 350°F and lightly grease and line an 8” x 8” tin with parchment paper.
- In a large mixing bowl, whisk egg, melted coconut oil, coconut sugar, maple syrup, and vanilla extract.
- Add in almond flour, cocoa powder, and salt.
- Hand fold in chocolate chips and evenly spread the batter into the greased tin.
- Bake for 14 – 16 minutes. Remove pan from oven and sprinkle the mini marshmallows, crumbled graham crackers, and extra chocolate chips on top.
- Turn the broiler on low and place the brownies back into the oven for 1 - 2 minutes, until the marshmallows are toasted. Watch very carefully so they do not burn. Smudge the warm and melty marshmallows right out of the oven or leave them whole.
- Let cool & enjoy!
Notes
- Coconut sugar can be swapped with light brown sugar for a similar sweetness and texture.
- Store brownies in an airtight container at room temperature for 2 to 3 days to maintain freshness.
