Ingredients

Servings
  • 1 pound turkey breast sliced, 450g
  • 1/2 red cabbage shredded, head
  • 1/2 white cabbage shredded, head
  • 1 bell pepper de-seeded and finely sliced
  • 1 carrot cut into matchsticks, large
  • 2 bell pepper de-seed and finely sliced
  • 6 radish finely sliced
  • 1 cup bean sprout
  • 3 green onions (scallions/spring onions), finely sliced
  • 4 tbsp cilantro fresh coriander, chopped
  • 3 tbsp sesame seeds toasted
  • 3 tbsp nut optional, toasted

Tahini Dressing:

  • 1/4 cup tahini 120 ml
  • 1/4 cup water or more as needed
  • ¼ lemon juice 60 ml
  • 1 garlic minced, clove
  • sweetener or maple syrup if not low- carb, to taste
  • salt
  • black pepper

Instructions

  1. Add salad ingredients in a large bowl and mix to combine.
  2. Make the salad dressing by adding all the ingredients into a blender and blend till creamy.
  3. Add half the salad dressing into the salad and toss. Taste and add more dressing as required.
