Description

The Healthy Vanilla Buttercream Frosting combines room temperature butter with coconut cream, powdered sugar, vanilla extract, and salt. The butter is beaten alone until pale and fluffy before the coconut cream is incorporated carefully to avoid separation. Powdered sugar is added gradually with continued beating for a smooth, creamy texture. The frosting has a subtle coconut undertone with the classic vanilla buttercream sweetness balanced by salt.

  • 6 tablespoon butter room temperature (I like to use salted butter)
  • 3 cups powdered sugar
  • 2 teaspoon vanilla extract
  • ½ teaspoon salt
  • cup coconut cream room temperature

Instructions

  1. Beat butter on its own in a stand mixer for 5-10 minutes on high until pale and fluffy.
  2. Add coconut cream and beat on medium until combined, just about 15 - 30 seconds.
  3. Add 1 cup powdered sugar, beat to combine. Repeat 2 more times with remaining powdered sugar. Add vanilla & beat on high 2 more minutes until combined. 
  4. Ice 12 cupcakes or one 9-inch cake; enjoy!

Notes

  • Beat butter thoroughly before adding coconut cream to prevent separation.
  • Use vegan butter for a dairy-free version.
  • Refrigerate in an airtight container for up to one week; let sit at room temperature before frosting.
  • Hand mixers can be used but may not achieve the same fluffiness.
