Description
This Greek beef stew, known as Mosharaki kokkinisto, uses beef shoulder cut into sizable chunks that are browned to lock in flavor before simmering in a tomato-based sauce. Olive oil, onions, and garlic provide the aromatic foundation, and red wine adds depth to the sauce. The dish is distinguished by the use of fragrant spices such as bay leaves, cloves, allspice, and a touch of cinnamon, traditionally encased in the cooking liquid to infuse complex warmth. The stew slowly simmers until the beef becomes tender and the tomato sauce thickens to a rich consistency. This stew pairs well with grains, potatoes, or bread to soak up the sauce.
Ingredients
- 6 tablespoons olive oil
- 1800 grams / 4 Pound beef shoulder cut into 1,5 inch cubes/chunks
- 1 medium-sized onion chopped
- 2 large garlic chopped, cloves
- 60 ml red wine sweet or semi-sweet
- 1 tomato chopped, very ripe
- 3 tablespoons tomato paste
- 2-3 bay leaf dried
- 10-12 pieces cloves
- 10-12 pieces allspice
- 1 tick cinnamon
Instructions
- Heat olive oil in a medium-sized cooking pot over high heat. Brown the beef chunks on all sides. Remove from pot and set aside. NOTE: Do not add all the meat in the pot at once. The temperature will drop at once and the meat won't brown properly.
- Add chopped onion and garlic in the same pot, and cook until tender.
- Add the meat back to the pot. Pour in the wine, and wait until it evaporates completely.
- Stir in remaining ingredients. Cook for a minute or two.
- Pour in enough water to cover the meat completely.
- Once it starts to boil, reduce heat to medium-low and simmer for 1-2 hours. Until meat is tender enough when you prick it and sauce has thickened sufficiently. Note: Cooking time varies depending on the age of the meat.
- Serve with a garnish of your preference.

- Brown the beef in batches to maintain high pan temperature and ensure proper searing.
- Spice blend includes bay leaves, cloves, allspice, and cinnamon for a warm, layered flavor.
- Simmer the stew for 1 to 2 hours, checking meat tenderness and sauce thickness periodically.
