Description
This recipe involves coating salmon fillets skin-side down with a herb crust made from panko breadcrumbs, olive oil, lemon zest, and finely chopped parsley. The salmon is baked at 200°C (400°F) for 18-20 minutes, which results in a golden crust and moist cooked fish. The lemon zest imparts citrus aroma while the parsley adds fresh, green flavor. Ingredients
- 240 g salmon about 120g/4.25oz each, fillets
- 20 g panko breadcrumbs
- 1 tablespoon olive oil
- 1 lemon zest only
- 10 g parsley finely chopped, fresh
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- In a bowl, add 20 g Panko breadcrumbs, 1 tablespoon Olive oil, zest of 1 Lemon and 10 g Fresh parsley. Mix well.
- Put 240 g Salmon fillets fillets skin side down in a baking dish.
- Divide the breadcrumb mixture between the salmon fillets, spreading it over the top of the fillets.
- Put into the oven and cook for 18-20 minutes.
Notes
- This recipe can be doubled or tripled depending on serving size needed.
- Use salmon fillets of similar thickness to ensure even cooking.
- For a richer crust, brush melted butter on fillets before adding the topping.
- Add chopped spinach or rocket (arugula) to the herb mixture for a green boost.
