Herbed Chicken With Farro Risotto

A new and delicious twist on a regular risotto. This Parmesan Farro Risotto, in combination with herbed chicken, makes an easy and hearty dish for a casual get-together.

Ingredients

Servings

For the Herbed Chicken

  • 4 chicken thighs
  • 4 tablespoons of Tuscan Seasonings I recommend Victoria Taylor's Seasonings, divided
  • 3 teaspoons olive oil divided
  • 1 teaspoon salt divided

For Farro Risotto

  • ¾ cup farro rinsed
  • 2 garlic minced, cloves
  • 1 carrot julienned, small
  • 1 onion minced, medium
  • ½ can (7.25 oz) diced tomatoes
  • 2 cups chicken broth more broth might be needed, low-sodium
  • ¼ cup peas frozen
  • 1 tablespoon capers
  • ½ cup Parmesan Cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 425 F.
  2. Brush each chicken thigh with 1 teaspoon of olive oil, sprinkle with 1 tablespoon of Tuscan Seasonings and ¼ teaspoon of salt. Bake chicken for 40 minutes or until juices run clear.
  3. Meanwhile, heat olive oil in a medium saute pan and over medium heat.
  4. Add onion, carrots and garlic and cook for 3-4 minutes until onion is translucent.
  5. Add Farro, salt, pepper and cook for two more minutes stirring often.
  6. Add diced tomatoes with the juices and 1 cup of chicken broth. Give everything a stir, cover with a lid and cook over a medium heat until liquid is absorbed.
  7. Continue adding broth ½ cup of broth at a time, stirring occasionally until Farro absorbs all liquid and is cooked through, about 30 minutes.
  8. Stir in frozen peas, capers and Parmesan. Cover with a lid and cook for another 1-2 minutes until peas have softened.
  9. Serve with herbed chicken and side salad!
