Herbed Couscous

Truth be told we never had this in Morocco, it was always plain couscous… but you know I love to put my west coast spin on everything so we’re making Herbed Couscous from now on!

Ingredients

Servings
  • 1 ½ cups couscous dried
  • 1 ½ cups water
  • 1 cup mixed fresh herbs mint, parsley and chives, chopped
  • 1 lemon juiced
  • 2 tablespoons olive oil
  • salt
  • black pepper

Instructions

  1. Combine the couscous and water in a medium pot and cook according to the package directions. Once cooked, let sit for 10 minutes and then fluff with a fork.
  2. Toss with all of the herbs, lemon juice, olive oil, salt and pepper. Serve alongside the rest of the meal

Notes

  • This is a perfect alternative to rice when serving chicken, especially if it has a sauce.
