Description
This cookie recipe blends softened unsalted butter with granulated and brown sugar, then incorporates eggs, egg yolk, and vanilla extract for a rich, creamy batter. Cocoa powder, flour, baking soda, and salt are mixed in to create a chocolate cookie dough that's chilled before baking to firm up the dough and enhance texture. After shaping into small balls about three-quarters of an inch in diameter and rolling optionally in sugar, the dough is baked at 350°F for 7 to 9 minutes, just until edges start to brown lightly. Immediately after baking, an unwrapped Hershey Kiss is pressed into the center of each cookie, melting slightly from the residual heat.
The cookies finish cooling on a rack to let the kiss set properly on top. This results in a soft, tender cookie with a prominent chocolate flavor from both the cocoa and the candy. The cookies maintain a moist crumb and have a pleasant balance between bitter cocoa and sweet chocolate. Ingredients
- 1 cup butter softened, unsalted
- 1 cup granulated sugar
- ⅓ cup brown sugar
- 1 egg room temperature
- 1 egg room temperature, yolk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ⅔ cup cocoa powder unsweetened
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 48 chocolate kisses unwrapped
- 2 tablespoons granulated sugar or sprinkles, for rolling, optional
Instructions
- Mix sugars and butter with a hand mixer on medium until light and fluffy. Add egg, yolk and vanilla, mix well.
- Whisk together flour, cocoa, baking soda, and salt in a small bowl.
- Add dry mixture a little bit at a time to the butter mixture until well combined. Refrigerate dough for at least 1 hour.
- Preheat oven to 350°F.
- Divide into 48 balls, about ¾". Roll in sugar if using and place on a baking sheet.
- Bake 7-9 minutes or until lightly browned on the edges.
- Remove from the oven and cool 2-3 minutes. Press a kiss into the center of each cookie and remove it to a cooling rack.
- Cool completely.

- Use room temperature ingredients to help with mixing and texture.
- Measure flour by gently spooning into the cup instead of scooping to avoid tough cookies.
