Description

This cookie recipe blends softened unsalted butter with granulated and brown sugar, then incorporates eggs, egg yolk, and vanilla extract for a rich, creamy batter. Cocoa powder, flour, baking soda, and salt are mixed in to create a chocolate cookie dough that's chilled before baking to firm up the dough and enhance texture. After shaping into small balls about three-quarters of an inch in diameter and rolling optionally in sugar, the dough is baked at 350°F for 7 to 9 minutes, just until edges start to brown lightly. Immediately after baking, an unwrapped Hershey Kiss is pressed into the center of each cookie, melting slightly from the residual heat.

  • 1 cup butter softened, unsalted
  • 1 cup granulated sugar
  • cup brown sugar
  • 1 egg room temperature
  • 1 egg room temperature, yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • cup cocoa powder unsweetened
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 48 chocolate kisses unwrapped
  • 2 tablespoons granulated sugar or sprinkles, for rolling, optional

Instructions

  1. Mix sugars and butter with a hand mixer on medium until light and fluffy. Add egg, yolk and vanilla, mix well.
  2. Whisk together flour, cocoa, baking soda, and salt in a small bowl.
  3. Add dry mixture a little bit at a time to the butter mixture until well combined. Refrigerate dough for at least 1 hour.
  4. Preheat oven to 350°F.
  5. Divide into 48 balls, about ¾". Roll in sugar if using and place on a baking sheet.
  6. Bake 7-9 minutes or until lightly browned on the edges.
  7. Remove from the oven and cool 2-3 minutes. Press a kiss into the center of each cookie and remove it to a cooling rack.
  8. Cool completely.

  • Use room temperature ingredients to help with mixing and texture.
  • Measure flour by gently spooning into the cup instead of scooping to avoid tough cookies.
  • Chocolate kisses can be substituted with small peanut butter cups or Rolos for variety.
