Hibachi Fried Rice

Japanese Hibachi fried rice is flavored with cubed ham or BBQ pork, vegetables and eggs stirred into the fluffy grains with a ginger sauce.

Ingredients

  • 3 cups day-old short-grain white rice (cooked) (Calrose, Kokuho Rose or Koshihikari)
  • 2 teaspoons vegetable oil
  • 1 teaspoon sesame oil
  • 2 green onions thinly sliced, whites and greens separated
  • 2 cloves garlic minced
  • 2 eggs beaten
  • 4 ounces char siu or ham cut into small pieces
  • ½ cup frozen edamame or peas thawed
  • ¼ teaspoon white pepper
  • 2 tablespoons ginger sauce or soy sauce

Instructions

  1. Crumble the day-old rice into a bowl to break it up.
  2. In a wok or large frying pan, heat both oils over medium-high heat until shimmering. Add the whites from the green onions and garlic. Stir fry until fragrant, about 30 seconds.
  3. Add the beaten eggs and let it set for 30 seconds before adding the rice, and increase the heat to high. Use a spatula, tossing to coat the rice with egg, about 1 minute.
  4. Add remaining green onions, char siu and edamame, tossing to incorporate. Stir fry until char siu and vegetables are heated, about 1 minute.
  5. Season with pepper and ginger sauce, tossing to coat. Stir fry a few more seconds, then serve hot.

Notes

  • For leftovers, let the rice cool completely and transfer to an airtight container or sealable bag and squeeze out excess air. Freeze for up to 2 months. To thaw, let come to room temp, add a tablespoon of water, cover and steam in microwave for 2-3 minutes on high heat. Fluff with fork and enjoy.
