Hobo Foil Packet Dinner

The Hobo Foil Packet Dinner mixes sliced potatoes, carrots, and onions with ground beef patties, all seasoned and wrapped in foil. Cooking in the oven, grill, or over a campfire steams and roasts the ingredients together, blending their flavors. The foil packets make portioned meals easy to prepare and serve without utensils or cleanup, ideal for casual outdoor cooking or quick dinners.

Description

This dinner assembles thinly sliced yellow potatoes, carrots, and sweet onion, tossed with olive oil and seasoning salt. Lean ground beef is seasoned separately and formed into flat patties placed atop the vegetables within large foil packets. The packets are carefully sealed to trap steam and prevent juices from escaping, ensuring the meat remains juicy and the vegetables cook through.

Baking or grilling at 375°F or over a campfire gently cooks the beef and softens the potato and carrot slices. The method allows the flavors to meld while maintaining individual textures. The precooked bacon and cheddar cheese mentioned suggest optional layering or topping after cooking to add smoky richness and creaminess, though detailed steps for these were truncated in the instructions.

This meal combines protein and vegetables in a self-contained packet serving about four people. It suits outdoor cooking but can adapt to oven-only use. Doneness is checked by verifying the beef reaches 160°F and the potatoes become tender when pierced with a fork, balancing safety and texture.

The recipe also emphasizes ensuring the foil packets are tightly sealed to hold in steam and juices, which is key for moist results. This technique simplifies cooking and cleanup, preserving flavor and moisture in the combined ingredients.

Ingredients

Servings
  • 2 pounds potato I used 6-7 small yellow potatoes, for larger potatoes you may only need 4-5, yellow
  • 3 medium carrot 3-4 medium-sized carrots
  • ½ large sweet onion sliced thinly
  • 2 tablespoons olive oil
  • 2 teaspoons seasoning salt
  • 1 pound ground beef lean
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 lices Bacon precooked, chopped
  • 4 lices cheddar cheese

Instructions

  1. Preheat the oven to 375 degrees, preheat the grill or start the campfire.
  2. Slice the potatoes, carrots and onions all in about ¼ inch thin slices. Place in a large bowl or gallon zip top bag if camping. Add the oil and seasoning salt to the potato mixture, and mix well.
  3. In a large bowl, mix together the ground beef, salt and pepper. Form four hamburger patties that you press flat with your hands.
  4. Cut 8 large pieces of foil that are about 20 inches long each. Lay a piece of foil longwise up and down and a second piece of foil left to right to form a giant plus sign. Place ¼ of the potato mixture in the center of the foil. Add one hamburger patty on top of the vegetables.
  5. Pull the two sides from the top layer of foil up to meet each other. Fold the foil down until you reach the burger, then lay the foil flat. Bring the other two sides of the foil up to meet and roll the edges down. Roll the final loose edges in on both sides of the foil to form a large packet where the liquids won’t leak. Repeat the foil rolling for each hamburger patty to seal each packet.

To Make On The Grill Or Over A Campfire

  1. Cook the burger packets over medium heat (not directly on the flames, try hot coals or indirect heat) until the burger reaches at least 160 degrees and the potatoes are tender, usually about 30-40 minutes.

To Make In The Oven

  1. Bake in the oven on a sheet pan for 30-40 minutes or until the burger is cooked to at least 160 degrees and the potatoes are fork tender. Add a slice of cheese and cooked bacon if desired, then roll the foil packet closed again. Let it cook for 2-3 minutes or until the cheese has melted, then enjoy!

Notes

  • Check that ground beef reaches 160°F for safe consumption.
  • Use a fork to test that potatoes are tender before serving to ensure proper cooking.
  • Seal foil packets tightly to trap steam and juices for moist, evenly cooked food.
