Homemade Apple Pie Filling
Description
The filling begins with fresh apples tossed in lemon juice to maintain color and freshness. A mix of white sugar, brown sugar, cornstarch, cinnamon, nutmeg, and sea salt combines in a saucepan with water and is brought to a low simmer. The apples are added and cooked covered for 6 to 10 minutes until tender and the sauce thickens.
This preparation results in a thick, glossy filling with tender apple pieces coated in a warmly spiced sauce. The texture varies slightly depending on apple piece size but is generally soft yet holds shape well. The cinnamon and nutmeg provide autumnal warmth, complemented by slight tartness from the lemon juice.
Use this filling after cooling in your favorite pie recipe or freeze or can it for later use. It provides flexibility and convenience for making apple desserts without peeling or coring apples each time.
Optionally, omit the cinnamon and nutmeg and substitute 1½ teaspoons of apple pie spice for a different spiced profile.
Ingredients
- 9 cups apples peeled, cored and chopped into uniform sizes, fresh
- 2 tablespoons lemon juice
- 3 cups white sugar
- 2 tablespoons brown sugar
- 1/2 cup cornstarch
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon sea salt coarse
Instructions
- In a large bowl, toss the apples with the lemon juice. This prevents browning. Set aside.
- In a large dutch oven or saucepan, stir together both the sugars, cornstarch cinnamon, nutmeg and salt. Add 4 cups of water and bring to a low simmer.
- Add the apples and return to a low simmer. Cover and cook for 6-10 minutes. If you cut your apples into bite-sized pieces, it will be closer to 6 minutes, but larger slices will be 10 minutes. Apples should easily pierce with a fork and sauce will have reduced and thickened.
- Remove from heat and allow to cool.
- Use after cooling, can or freeze.

Notes
- This filling yields enough for two standard 9-inch pies.
