Homemade Apple Pie Recipe

Homemade Apple Pie Recipe combines a classic double crust pastry filled with sliced apples tossed in lemon juice, sugar, flour, cinnamon, and nutmeg. Baking first at a high temperature and then lowering it allows the crust to crisp and the filling to soften. The balanced spice blend enhances the tender, sweet apple filling, making this a traditional dessert often served with vanilla ice cream.

Description

This apple pie uses a double crust pastry, rolled to fit a 9-inch pie plate and sealed with a beaten egg wash for a golden finish. The filling consists of peeled, cored, and sliced apples coated with lemon juice to prevent browning, sweetened with granulated sugar, and thickened with flour to catch juices released during baking. Warm spices like cinnamon and a hint of nutmeg add depth to the fruit’s natural flavor.

Baking starts at 425°F to set the crust and then reduces to 375°F to cook the filling through without burning the crust. Slits cut into the top crust allow steam to escape, ensuring the filling cooks evenly. After baking, the pie should rest for about 30 minutes to allow the filling to set before slicing. Serving with vanilla ice cream complements the warm spices and tender apples.

The recipe also provides instructions for baking from frozen and recommends using a parchment-lined rimmed baking sheet to catch spills. Covering the crust with foil or a shield can prevent over-browning during baking. The pie freezes well, maintaining quality for up to six months.

Ingredients

Servings

Crust

  • 1 pie crust double
  • 1 large egg beaten

Filling

  • 6 to 7 cups apple about 2 pounds, sliced
  • 1 tablespoon lemon juice fresh
  • ½ cup granulated sugar
  • 3 tablespoons all-purpose flour
  • ½ teaspoon cinnamon
  • teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 425°F.
  2. Peel the apples and cut them into quarters. Remove the core and slice the apples ¼-inch thick.
  3. In a large bowl, combine the apple slices with lemon juice, sugar, flour, cinnamon, and nutmeg, and toss well. Set aside.
  4. Roll out half of the pastry dough into a 12-inch circle. Line a 9-inch pie plate with the dough and fill it with the apple mixture.
  5. Roll out the remaining dough and cover the apple filling. Pinch the edges to seal, trimming any excess. Style the edges as desired by crimping or pressing with a fork.
  6. Cut 4 to 5 slits on top of the crust to allow the steam to release. Whisk the egg with 2 teaspoons of water or milk and brush over the crust.
  7. Bake at 425°F for 15 minutes. Then, reduce the temperature to 375°F and continue baking for 35-40 minutes more, or until the crust is golden and the apples are tender.
  8. Remove from the oven and rest for at least 30 minutes before serving. Serve with vanilla ice cream if desired.

Notes

  • For baking from frozen, bake at 425°F on a rimmed sheet for 20 minutes, then reduce to 375°F and bake for 40 to 55 minutes until crust is golden and apples softened.
  • Use a parchment-lined baking sheet to catch any drips and ease clean-up.
  • If crust browns too quickly, cover it with foil or a pie crust shield to prevent burning.
  • Apple pie freezes well either before or after baking; wrap tightly in plastic for up to six months.
