Description
This granola bar recipe begins by mixing oats and rice puffs then binding them with a mixture of melted butter, honey, and brown sugar heated until the sugar dissolves. Mini chocolate chips are folded into the mixture, with some reserved to sprinkle on top before pressing the mixture into a parchment-lined pan.
The bars are pressed firmly to create an even layer, ensuring they hold together after chilling. The reserved chocolate chips pressed on top add bursts of chocolate texture.
After covering, the granola set in the refrigerator for one to two hours solidifies to a chewy consistency that holds its shape when sliced. The recipe includes an optional step to toast oats before mixing to deepen flavor through gentle baking.
Ingredients
- 2 1/2 cups oats quick cooking
- 1 cup rice puffs
- 6 tbsp butter unsalted
- 1/3 cup honey
- 1/3 cup brown sugar
- 1/3 cup mini chocolate chips
Instructions
- Line a 9x9 baking sheet or dish with parchment paper, leaving some hanging over the edges. Combine the oats and rice puffs in a large bowl.
- Add the butter, honey, and brown sugar to a small saucepan and set over medium heat. Bring the mixture to a light simmer and whisk until the sugar is completely dissolved.
- Pour the hot butter mixture into the bowl with the oats and stir to evenly combine. Add the mini chocolate chips, leaving 2 tablespoons aside. They will slightly melt into the mixture.
- Transfer the mixture to the prepared baking sheet. With a large flat spatula or your wet hands, firmly press the granola down into an even layer. Sprinkle the remaining 2 tablespoons of mini chocolate chips over the granola and press them down.
- Cover the baking sheet and allow the granola to set in the fridge for 1-2 hours. After chilling, slice the granola into 12-16 bars. Enjoy!
