Homemade Chicken Adana Kebabs (Turkish Recipe)
Description
Homemade Chicken Adana Kebabs require finely minced chicken with about 15% fat content to maintain moisture and tenderness. The meat is combined with grated onion and red bell pepper, with excess liquid squeezed out to avoid sogginess. Garlic paste, green chili, paprika, red chili flakes, chopped parsley, and salt are kneaded in thoroughly to form a cohesive mixture.
The mixture is chilled to let flavors develop and then shaped around metal skewers into long, slightly flattened sausages. Wetting the hands with chilled water helps in molding the kebabs smoothly. Grilling over medium-high heat with brushing of oil creates a textured, lightly charred exterior while cooking through the chicken evenly.
These kebabs are traditionally served with flatbreads, salads, or grilled vegetables and make a flavorful meal or appetizer. They can be adjusted for spice level by varying chili amounts. Using multiple wooden skewers wrapped with foil can substitute for flat metal skewers when needed.
The recipe’s notes emphasize choosing the right chicken fat content for optimal texture and provide tips for assembling kebabs using available skewers for proper grilling.
Ingredients
- 1.1 lb chicken around 15% fat content for the best result, finely minced, mixed with fat, or 500 gram
- 1 teaspoon garlic paste
- ½ teaspoon green chili pepper minced, fresh
- 1 onion peeled and grated, medium
- 1 red bell pepper grated, medium or long red sweet pepper
- 1 teaspoon paprika sweet
- 1 teaspoon red chili flakes
- ½ cup parsley finely chopped, fresh
- 1 teaspoon salt or to taste
- neutral cooking oil for grilling, generic cooking oil
Instructions
Prepare the Kebab Mixture
- Grate the onion and red bell pepper and squeeze out all the juices.
- In a large mixing bowl, combine the ground chicken with grated onion and pepper, garlic, green chili, salt, paprika, red chili flakes, and chopped parsley.
- Knead the mixture thoroughly for a couple of minutes until all the ingredients are fully incorporated and form a dough-like mass.
- Cover the bowl and refrigerate it for at least an hour or upto overnight to develop the flavor.
Assembling
- Divide the chicken mixture into equal portions.
- Keep a bowl of chilled water next to you while assembling.
- Wet your palm in chilled water. Take each portion and mould it around a metal skewer, forming a long, slightly flattened sausage-like shape.
Grill the kebabs
- Preheat a grill or skillet over medium-high.
- Once it is hot, brush a little oil, and place the skewers on it.
- Cook for about 5-6 minutes, turning them a few times, until the kebabs are lightly browned, and some charred spots appear. Make sure not to overcook them.
Serve
- Serve the chicken adana kebabs hot or warm with your choice of accompaniment.
Notes
- Use finely minced chicken containing about 15% fat for juiciness and proper texture.
- Red bell pepper or long red sweet pepper adds essential moisture and flavor typical of Turkish-style kebabs.
- Adjust green chili and red chili flakes to control the spiciness according to personal preference.
- If flat skewers are unavailable, align three to four soaked round wooden skewers side by side and wrap tightly with aluminum foil to create a sturdy skewer for molding the kebabs.
