Homemade Creamy Roasted Garlic Dressing

This dressing combines rich roasted garlic with tangy white wine vinegar, honey, Dijon mustard, olive oil, and seasonings to create a smooth and flavorful creamy salad dressing. Roasting the garlic softens its pungency and adds depth, while blending the ingredients emulsifies them into a cohesive dressing. The result is a savory, mildly sweet vinaigrette suitable for various salads and as a creamy drizzle.

Description

The main feature is roasted garlic, achieved by cutting tops off garlic bulbs, drizzling olive oil, wrapping in foil, and roasting in the oven until soft and caramelized. The softened garlic cloves are blended with white wine vinegar, honey, Dijon mustard, salt, pepper, water, and olive oil until smooth and creamy. The vinegar and mustard provide acidity and emulsification, while honey balances with gentle sweetness. The dressing’s texture is creamy but pourable, making it versatile for salads or as a sauce.

Storing the dressing in an airtight container in the refrigerator helps preserve flavor and freshness for up to a week. Using jars like a Weck or mason jar assists in keeping out moisture that might affect quality. The note mentions roasting garlic in an air fryer as an alternative to using the oven, offering a convenient shortcut.
