Homemade Currywurst

Homemade Currywurst features grilled or pan-fried bratwurst sausages served with a spiced curry ketchup sauce made from sautéed onions, garlic, and a blend of curry powder, paprika, and warming spices. The sauce is pureed smooth and chilled to develop flavor. The sausages should be cooked until their casings are crisp and browned, providing a textural contrast to the tangy, mildly spicy sauce. This dish is traditionally served with French fries or crusty bread rolls.

Description

The recipe begins by gently cooking onions and garlic in oil until soft, without browning, then stirring in a mixture of curry powder, paprika, ground cloves, and cinnamon to toast briefly and release aroma. Ketchup, tomato paste, broth, apple cider vinegar, honey, Worcestershire sauce, sugar, mustard, salt, pepper, and optional cayenne are added and simmered. After simmering, the sauce is pureed smooth and chilled to allow the flavors to meld.

The bratwurst sausages, whether store-bought or homemade varieties like rotewurst, bockwurst, or weisswurst, are first gently poached if raw, then grilled or pan-fried to develop a thick, crispy brown crust. Proper cooking is important to texture and flavor. The finished sausages are served topped with the curry ketchup and sprinkled with additional curry powder.

This hearty German street food is typically accompanied by crispy French fries or crusty bread rolls (Brötchen) for a satisfying meal or snack. The recipe notes that the nutrition information provided pertains to the curry ketchup alone.

Instructions

  1. Heat the oil in a small saucepan and cook the onions just until soft and translucent. Do not brown them. Add the garlic and cook for another minute. Add the curry powder, paprika, cloves and cinnamon and cook for 30 seconds. Add all remaining ingredients and bring to a simmer. Reduce the heat to medium, cover and simmer for 15 minutes, stirring occasionally.  Use an immersion blender or transfer to a blender and puree until smooth.  Let the mixture cool completely and then refrigerate for a day before using to allow time for the flavors to meld.
  2. Makes 1 1/2 cups.  The curry ketchup will keep for up to a month in the fridge.
  3. HOW TO MAKE CURRYWURST:
  4. If the sausages are not pre-cooked, first poach them in lightly simmering water.  The next step is to grill/fry them to finish them off.  You can either grill or pan-fry the sausages. The important thing is to cook them until they develop a thick and crispy browned outer crust.  (So if you're pan-frying, be sure to use enough oil.)  Some curry wurst stands also cut vertical slits along the currywurst to prevent them from bursting open while cooking and then the sausages are sliced along the lines into bite-sized chunks before serving.
  5. To serve, slice the wursts vertically into bite-sized pieces, top with some curry ketchup, and sprinkle with curry powder.  Serve with French fries or a crispy bread roll (Brötchen).  Currywurst and fries/Brötchen are served in paper food trays and eaten with currywurst toothpicks.

Notes

  • Use enough oil when pan-frying bratwurst to achieve a crispy, browned crust on the sausages.
  • If sausages are not pre-cooked, poach them in lightly simmering water before grilling or pan-frying.
  • The curry ketchup sauce can be stored in the refrigerator for up to one month after preparation.
  • This dish is traditionally served with French fries or crispy bread rolls (Brötchen) for an authentic experience.
