Homemade Fig Bars

Homemade Fig Bars feature a soft, rolled dough enveloping a smooth fig filling made from soaked dried figs and honey. The bars are baked until golden, creating a tender cookie with a natural fruity sweetness that works well as a snack or light dessert.

Description

The recipe begins by soaking dried figs in hot water to soften and then pureeing them with honey to make a smooth filling. The dough is prepared by creaming butter and sugar, then incorporating egg, vanilla, and white whole wheat flour to create a cohesive dough. Rolling the dough into a rectangle and spreading the fig puree on half allows it to be folded over and sealed before slicing into individual bars.

Baking at a moderate temperature results in bars with a lightly golden crust and a moist, sweet fig center. The use of white whole wheat flour adds a mild wheat flavor while maintaining tenderness. These bars combine fruit and cookie elements in a convenient handheld form.

They are suitable for serving as snacks, lunchbox treats, or alongside tea or coffee. The preparation allows for portioning and sharing easily. No additional toppings or coatings are required, keeping the bite focused on fig and buttery dough flavors.

Ingredients

Servings
  • 1 cup dried figs roughly chopped, stems removed
  • 1 tablespoon honey
  • 6 tablespoons butter unsalted, softened
  • 1/2 cup sugar
  • 1 egg large
  • 1 teaspoon vanilla extract
  • 1 1/2 cups white whole wheat flour

Instructions

  1. Preheat your oven to 350°F.
  2. Place the dried figs in a small bowl, cover with hot water, and soak for 10 minutes.
  3. Remove the figs from the water with a slotted spoon and place in the bowl of a food processor. Add the honey and 1 tablespoon of the soaking liquid. Puree until smooth and spreadable.
  4. In the bowl of a standing mixer, or with a hand mixer, cream together the butter and sugar for 2 minutes, or until smooth. Add the egg and vanilla and mix until incorporated.
  5. Add the flour and mix until a dough forms.
  6. Roll dough between two pieces of parchment paper and shape into a 12 x 5 inch rectangle.
  7. Spread the fig mixture on one side of the rectangle, spreading it evenly along the 12-inch side leaving a 1/4-1/2 inch border along the edges.
  8. Fold the dough over on top of itself and gently press the dough together at the edges.
  9. Cut each log into 10 cookies and transfer to a silpat or parchment-lined baking sheet.
  10. Bake 15-20 minutes, or until golden.
